It was raining when we got up this morning; it continued to drizzle until almost 9:00which made the workers slow in coming to work.  Meri and Amama came to work but they were late.  We knew that Zorash would not be coming; she was going out to the village with a group to demonstrate how to cook the rice before it is hulled.  Mr. Iddrisu and Nazo never showed up.  Steve finally called them to ask if they were coming to work.  Mr. Iddrisu said he was not coming and would make up the day on Saturday but Nazo was sick.  Nazo looks like he does not feel good.  He is resistant to going to the doctor.  He says he is fine but he has been losing weight and has no energy.  Zorash turned up this afternoon so her absences this morning would not count against her.  She got back from the rice demonstration early so she wanted to make up her time.  We had to go to town later this afternoon and Zorash was going to be the only one in the compound; she said that she was afraid to stay here alone so she went home.

The manager of the electric company was not in his office today so we were not able to do anything about getting the credit transferred.  So annoying!

I tried the Worst – Best thing I have eaten in a while.  There is a man that grills meat on the main road that leads to the mission house.  I look at his grill full of meat every time we go past it.  He makes these odd looking bundles of meat.  They are shaped like a huge sausage.  I have seen them in various stages of doneness from raw to fully cooked.  The meat is rolled and then wrapped with the animal’s intestines.  He uses the small intestines to secure everything inside the package.  I suspected that the meat inside the bundle was organ meat.  I finally got up the nerve to stop and ask about the meat.  The man spoke very little English.  But after some discussion and pointing at his own body I figured out that the meat inside was a combination of all the organ meats and excess fat.  He used the heart, stomach, liver, lungs, thymus, kidneys and anything else that was inside the animal.  I told him I wanted to try the meat.  I thought he would cut me off a portion, sell it to me and I would take it home to try but no he only cut me off a couple of bite sized pieces and offered them to me on a piece of newspaper.  I had come this far so there was no way I could decline his offering.  The piece he offered me had small bits of sheep fat, stomach and mystery meat.  I thought I would just put it in my mouth, hide it in my cheek, and thank him for his kindness.  I could not because he was standing there waiting for me to eat it!  I really expected it to taste like the back end of a goat!  I was so pleasantly surprised!  It had no smell, no odor and it was delicious!  I want to go back when I have more time with an interpreter so I can video the process of making the mystery package.  It is definitely something I would eat again.  Of course the organ meat is bad for your cholesterol.  I am not sure about the lungs; lungs are not an organ meat that is sold in the states; there has to be a reason why.
